The finished wine was insanely sweet. Since its first, semilegendary, certainly accidental harvest, some winemakers have specialized in ice wine, waiting every year for the first frost so they can harvest crops of frozen grapes. Among the many ways wine is rated, graded, and weighted today, it is measured on a "sugar scale." Typical table wine runs from 0 to 3 on the sugar scale. Ice wine runs from 18 to 28.
The shrunken nature of the grapes is due to water loss. |

The answer seems to lie in the red wine swirling in French wine glasses, wine that is an excellent source of polyphenols (the same class of nutrients to which green tea's active ingredients belong). As antioxidants, red wine's polyphenols are believed to mitigate the effects of a fatty diet and smoking.3
A similar paradox is seen in Japan. Despite a high percentage of smokers (estimated to be as much as 75 percent of adult men), Japan has an astonishingly low rate of heart disease. It seems possible that the polyphenols in green tea cause the same paradox that those in red wine lead to. |

Red wines are fermented with grape skins, allowing the wine to absorb greater amounts of resveratrol than white wines, which are fermented without grape skins. Thus, some nutritionists are recommending a little red for the head.
The precise amount of wine needed to reap any possible benefits of resveratrol is unknown and will vary depending on your size and weight. As a general rule, you should try to limit yourself to no more than two glasses a night. Recent studies have linked moderate intake of alcohol with a 45 percent less risk of developing dementia. |

It is not clear whether there are any significant differences between red wine, white wine, liquor, and beer. However, researchers have observed the "French paradox": in France, saturated fat intake and mean cholesterol levels are high, but heart disease mortality is low. Wide publicity about this paradox has asserted that red wine consumption in France is high and is responsible for the unexpected results. As a consequence, a general perception exists that red wine is especially beneficial. |

Most wine is raw. wine is simply the product of grape fermentation. Beer is brewed (cooked)! An occasional glass of wine does not break or hinder the Sunfood "high." Beer, however, always snapped the spell for me and I gave that up years ago. Choose organic wine containing no added sulfites. I personally do not consume alcohol anymore.
Choose dandelion over iceberg lettuce. Commercial iceberg lettuce contains relatively little nutrition. Dandelion is a wild food and it contains a full complement of minerals and vitamin C.
Choose yams over potatoes. |

The shrunken nature of the grapes is due to water loss. Chemically speaking, it's not difficult to guess why grapes might have evolved to offload water at the onset of a freeze—the less water in the grape, the fewer ice crystals there are to damage the delicate membranes of the fruit.
How about the sharp increase in sugar concentration? That makes sense too. |

He shou wu is put into a ceramic container and covered with wine. (Approximately 1 ounce he shou wu to 16 ounces wine.) The mixture is left for a few weeks and then strained. Small doses (1-2 ounces) of it are then taken on a daily basis as a restorative tonic for deficient blood and male reproductive weakness. It also can be mixed with Asian ginseng, eucommia bark, and dogwood fruit.

Others suffer from allergic reactions to the sulfites in wine, especially red wine. People with heart arrhythmias or prostate problems might also find their conditions exacerbated by strong wines.
There is also some fear that alcohol promotes breast cancer, although I do not find the data for this compelling. But if you can and do enjoy wine, get some French red wine and enjoy from as little as two glasses per week to as many as two per day. Remember that resveratrol disappears from an uncorked bottle of wine at room temperature in a day, but will last about a week in the refrigerator. |
| Whether or not to drink wine, however, involves a number of factors. Some people are prone to alcoholism, and need to avoid alcoholic beverages. Others suffer from allergic reactions to the sulfites in wine, especially red wine. People with heart arrhythmias or prostate problems might also find their conditions exacerbated by strong wines.

All wineries use malic acid to produce wine. (See Suppliers List in the Appendix.)
Cranberry juice also contains much malic acid and can be used for the preparation period (4 ounces of juice mixed with 4 ounces of water, 4 times per day for 6 days). It can also be combined with apple juice. There is added benefit if some cranberry juice is used each day for two or three weeks before liver cleansing.
Another alternative is gold coin grass. Use the same directions as given for those who are intolerant to apple juice. |

Using human volunteers, he found that supplying 400 mg of red wine a day for two weeks to these happy guinea pigs, significantly reduced the ability of LDL to be oxidized in the presence of copper, a standard measure of LDL oxidizability.369 Other studies did not reproduce this effect.370 In fact, this same study found that white wine actually increased the risk of oxidizing LDL.
Another way red wine may reduce atherosclerosis is by the action of flavonoids, such as catechin, epicatechin, and quercetin, to bind free iron. |
| For example, some have proposed that the weak estrogenic effects of flavonoids in the wine actually reduce the risk of cardiovascular disease.373 Estrogens may reduce the risk of LDL oxidation.
While most of us would like to think that red wine is a magic elixir, the French paradox may have very little to do with wine at all. |

To have the benefits advocated for red wine and more, it is better to drink the fresh juice of purple grapes. Plant foods contain about 4,000 flavonoids. Eating a diet rich in fruits and vegetables is one of the best ways to maintain a healthy circulatory system, while alcohol is not. Although the flavonoids contained in red wine may have some beneficial effects on the blood, the alcohol that goes with it, after initially thinning the blood due the alcohol's diuretic effects, makes it thicker than it was before. |
| If your arm muscle tests weak, it shows that any benefit that may be been left in the red wine from the grape juice has been voided. The alcohol in the wine actually causes the shutdown of energy flow to the muscles.

Wine bottles sold in California no longer use lead-foil wrappers, protecting consumers from wine with unacceptably high levels of lead. Meanwhile, major manufacturers have asserted that Proposition 65, with its labeling demands, "provided an opportunity to improve product performance." The resulting products—from white-out to paint stripper—worked effectively and cost no more. They were better products, though.
I started buying brands of personal-care and cosmetic products at Rite-Aid and other stores and sending them to the analytical laboratory. Each test cost $275. |

HAVE A GLASS OF wine WITH D I N N E R . wine may not be the X factor in the French or Mediterranean diet, but it does seem to be an integral part of those dietary patterns. There is now abundant scientific evidence for the health benefits of alcohol to go with a few centuries of traditional belief and anecdotal evidence. Mindful of the social and health effects of alcoholism, public health authorities are loath to recommend drinking, but the fact is that people who drink moderately and regularly live longer and suffer considerably less heart disease than teetotalers. |

I have a nice wine collection and I love drinking a good California Cabernet or other red varietals. My wine cellar took a big hit during this period. Basically, I didn't have any rules or guidelines with my diet, so anything went. Does that sound familiar?
My physical appearance wasn't the only thing that started to deteriorate. My brain no longer functioned as clearly. I had to search for the words to express myself instead of having the command of language that I was used to. Poor nutrition and a lack of exercise can have a dramatic effect on your body and your mind. |
